Signature Chocolate Chip
The Pretentious Gourmet's Signature Chocolate Chip is the recipe that started it all. Back in 2013, I was looking for a good Chocolate Chip recipe. I started with creating a dough that had the perfect balance of ingredients, then added Chocolate Chips until the dough couldn't hold any more. I use dark chocolate and white morsels in a four to one ratio, giving it the perfect balance of strong, bitter chocolate flavour to sweetness.
Chai Spiced
The Chai Spiced recipe is The Pretentious Gourmet's version of the gingerbread cookie. When I developed this recipe, I knew I wanted a molasses cookie, but I wanted something different, unique. My nephew was the one who gave me the idea to use the spices in chai tea. Using those spices, I was able to create a full-bodied cookie that wasn't overwhelming. The perfect cookie to compliment a hot cup of tea on a Winter's eve.

Double Chocolate Espresso
The Double Chocolate Espresso was crafted for the dark chocolate lover. I started by adding Valrhona Cocoa, considered some of the best baking cocoa in the world, to the cookie dough. Then I added dark chocolate chips and then just a hint of espresso. The result is a slightly sweet, slightly bitter cookie that is an experience for all the senses.



Cranberry and White Chocolate Oatmeal
When I crafted my first oatmeal cookie, I had a serious problem I had to overcome. I don't like raisins, so the standard oatmeal raisin cookie was out. But I do like dried cranberries, so I started with that! I added some white morsels to compliment the tart cranberries and then spiced the oatmeal with cinnamon and nutmeg and, voila, the Cranberry and White Chocolate Oatmeal cookie was born!


Cherry, Chocolate and Walnut
The Cherry, Chocolate and Walnut recipe was actually not my idea. A young lady asked me if I could do a variation on my Chocolate Chip recipe with dried cherries, milk chocolate and English walnuts. I baked the cookies she ordered and after they came out of the oven, I tried one. It was amazing! I loved it so much I asked her if I could use the recipe on a regular basis. This recipe is one of my favorites to this day!
Mint Chocolate Chip
The Mint Chocolate Chip recipe was an idea from a friend of mine. She told me about a chocolate chip cookie that was made with after dinner mints instead of chocolate chips. I played around with that idea a little and found that I liked using Peppermint Oil and crushed Candy Canes instead. And to help give it a stronger chocolate flavour, I added Valrhona Cocoa to the cookie dough. The Mint Chocolate Chip cookies get really popular in the Fall and Winter seasons.
Apricot Pecan Oatmeal
The Apricot Pecan Oatmeal cookie came from an idea I had to produce a less sweet cookie. It's cousin, the Cranberry and White Chocolate Oatmeal cookie, is a strong, sweet cookie. I wanted something with a more subtle taste that I could offer as well. I use dried apricots, but I had a hard time finding apricots that didn't have preservatives. Finally, I found organic Turkish Apricots that had no preservatives, just dried apricots. I paired those apricots with toasted pecans to create the Apricot Pecan Oatmeal cookie.
